食材准备
主料:花蛤
辅料:葱、姜、蒜,花椒、干红辣椒、香菜。
佐料:食用油、香醋、香油。
开始炒制
1、将花蛤清洗干净后控水备用,葱姜切丝,蒜切片,干红辣椒切段,香菜切段。
2、热锅倒入食用油,油温八成热,放入葱、姜、蒜、花椒、干红辣椒爆出香味,放入花蛤大火翻炒,翻炒至花蛤口全部打开,倒入适量香醋,放入香菜段,滴入几滴香油翻炒均匀出锅装盘即可,爆炒香辣花蛤完成。
特点:肉质细嫩,汤汁鲜美,香辣爽口,解馋又美味。
小贴士
想吃花蛤一定要提前购买回来,用盐水浸泡3~4个小时,让其把泥沙吐出来,再搓洗几遍把花蛤外面污渍清洗干净,炒制的时候大火爆炒,不要放盐,花蛤本身自带盐份,不要用酱油,味精,酱油味精会影响花蛤自身鲜嫩。

姜 少量

干辣椒 六七个
青辣椒 1个
盐 少量
白糖 一小勺
料酒 三匙
花蛤 2斤
做法步骤
1、葱切片,姜切丝。
2、锅中倒油,放入干辣椒和葱姜煸炒。
3、倒入花蛤,继续翻炒。
4、倒入料酒。
5、炒至花蛤开口时,放点盐和白糖。
6、放入青辣椒(切块切丝都可以),翻炒。
7、放入蒜末继续翻炒。待青辣椒变软一些时,关火。
8、美味即享。
