做糖蒜更好选用这种新鲜的紫皮大蒜
1、首先把上面的2层皮剥掉,留最里面的一层皮就可以,然后把根部切掉,顶部留上一截。
2、准备一个大盆倒入凉开水,然后倒入200克盐搅拌均匀。
3、把大蒜全都放进盐水里,浸泡24个小时,这个作用是去掉蒜的辛辣味,而且盐水泡出来的蒜不会发蔫。
4、这个蒜已经泡了一天 *** 了,把蒜捞出来顶部朝下控干水份,提前用开水把罐子烫一下,控干水分 备用。
5、大蒜控干水分后,开始调糖醋水,准备无水无油的盆倒入白醋。这个醋要根据大蒜的多少来倒,我最后倒了有5斤白醋,再倒入4斤白糖,半斤红糖搅拌均匀,白糖和白醋的比例大概是2比3。
6、将控干水份的蒜放入无水无油的密封罐里。
7、再把调好糖醋水倒进去、刚好淹住蒜即可,盖上盖子放到阴凉干燥处保存。
一个月后就可以吃到糖蒜了,这样腌的糖蒜酸甜脆爽,而且完全没有辛辣味。
