做韭菜盒子,调馅、和面都是关键,馅要精不能杂,面要软不能硬,说起来好像很简单,能把这两样做好了却不容易,很多人做出的韭菜盒子皮又厚又硬,甚至有时烙都烙不熟,外面烙糊了,里面还粘牙,要么就是皮太薄了没有韧 *** ,熟是熟了,却破皮露馅到拿不出来了,满锅都是馅、碎成一锅渣,这都是面没和好惹的祸,那么韭菜盒子要怎样和面才好吃呢?下面,就由我这个资深吃货分享一下我的和面小技巧,这样和面做出的韭菜盒子皮薄如纸,又软又有韧 *** ,凉了也不会发硬:韭菜盒子和面,有人用热水有人用冷水?都不对!教你正确做法,香!


【韭菜盒子的做法】:

1.取一个空盆倒入200克面粉,然后加入2克盐、几滴食用油,再分少量多次倒入110克的温水和面,用筷子搅拌至絮状、没有干面粉后再揉成光滑的面团,盖上保鲜膜醒面10分钟,加盐和食用油的目的是为了增加面的筋 *** 。


2.十分钟后,我们把醒好的面团取出揉成长条,分成大小均等的六份,取每一份 *** 十几下,然后再搓成长条状,搓好的长条放入盘子中,均匀的抹上食用油,要多抹一点,然后盖上保鲜膜二次醒发30分钟,二次醒发是面皮软且有韧 *** 的关键,经过二次醒发,做出的韭菜盒子不但皮薄,而且放凉后也依然很软不会变硬。抹过食用油的面团,醒好后它的拉伸 *** 更好、筋道有韧 *** 、抻多长都不会破皮!



3.准备一下馅料,韭菜盒子的经典三原料:韭菜、鸡蛋和粉丝,其它不要多放,放多了味道反而杂乱就不鲜了!韭菜摘洗干净后切细,放入盆中加入两勺食用油,搅拌均匀备用,先加油可以锁住韭菜里的水分不流失,包的时候不出水,吃的时候更鲜美!


粉丝用热水泡软切碎备用,鸡蛋2个磕入碗中打散,热锅冷油倒入打散的鸡蛋液,用筷子搅拌成鸡蛋碎后盛出晾凉备用,最后再将韭菜、鸡蛋碎和粉条放到一起,加入适量盐搅拌均匀,馅就调好了。


4.这个时候面也就醒好了,我们把面剂子取出,将盘子里剩余的油抹到案板上,抹油可以防止粘连,再把醒好的面剂按扁,擀成薄一点的长形饼皮,擀得越薄越好,不用担心擀破,醒好的面剂子会特别有韧 *** ,怎么擀都不会破皮。

5.调好的馅料放在饼皮的中间,饼皮两面对折后包住馅料,再从饼胚的一头慢慢卷起,一边卷一边抻,让饼皮更薄,最后把尾巴处折在饼的反面压平即可



6.电饼铛上下火预热至温热时多放一点油,我喜欢油多,饼呈半炸半煎式做出来,这样特别香!做好的饼胚不需要再醒发了,直接放入电饼铛中,正反两面各烙2分钟左右,韭菜盒子烙至两面金黄,用手轻按一下饼皮,能快速回弹就熟了,盛出享用吧!
