白萝卜、青红椒、大蒜、生姜、花椒粒、老抽、生抽、白糖、香醋
4、先把洗干净的白萝卜切去两头,然后一切为四,再切成片,放入盆中,盆中放入少许食盐,揉抓均匀,把萝卜的水分腌制出来,放入一旁腌制十分钟。青红椒去蒂以后切斜片,生姜切片、大蒜也切片
5、腌制时间到时,不要用水清洗,不然不容易保存,直接挤干水分,然后放入另外一个盆中,再把青红椒、蒜片、生姜、花椒粒,再浇上热油激发出香味

- 盐 50g
- 大蒜 5瓣
1、萝卜切片再中间划小条不要切断哦,先放盆里撒盐腌制3-4小时杀出水分,这样萝卜容易晒干,盐稍微多一点保证每个萝卜片都能有盐。 在挂好在晾衣架上放太阳下晒,杀出水分后不要清洗,直接拿出去晒,有盐份包裹的萝卜条可以防蚊虫也保证晾晒隔一天夜不会坏。
2、晒干是这样的,手摸上去都是 *** 的,春天里我是之一天中午晒的第二天下午晒好。 这个晾晒时间不一样定,之一天傍晚就去看一下有没有晒干,要是没干不要收回来就放外面直到第二天下午就干了。这个最多晒48小时,也就是两天。
3、然后撕开,一条一条。
4、准备盐,蒜末,辣椒粉。更好是细辣椒粉不要有辣椒籽那种。 先撒一勺半盐揉萝卜丝揉到见不到盐了静置一会。这里放盐的多少根据你的萝卜来,之前杀水分是已经洒过一次盐了所以一点不要放多了。没把握就先来一个半勺 *** 好尝一下不有盐味就再来加盐,再揉到看不见盐粒,反复几遍。
5、再放入辣椒粉和蒜末 *** ,就像这样每个萝卜上都有辣椒粉了。
6、放密封盒中再盖上一层保鲜膜,盖好盖子放冰箱,(或者是玻璃瓶中)一周后就可以吃了,鲜辣爽口的小菜就有了

萝卜、食盐、八角、桂皮、香叶
4、15斤的萝卜清洗干净,再切成条,放入不锈钢盆中,15斤的萝卜放入600克的食盐,充分搅拌均匀,腌制48小时,每8个小时翻动一下,腌的时候摆在阴凉处
5、萝卜腌制时间到时,再摆在外面晒干水分。腌出来的卤水不要倒掉留着备用。萝卜晒了两天以后,把萝卜收回去。再把腌萝卜的卤水倒入锅中,水量少可以再加点,要保证萝卜干浸到卤水里面。
6、再放入桂皮、八角、香叶,盖上锅盖大火烧开,中小火慢炖10分钟。再把萝卜干倒入盆中,再浇上刚刚烧好的盐卤,烫得没事,这样可以起到消毒杀菌的作用,再给他翻拌均匀,腌制24小时
7、然后摆在太阳底下晒到半干,再放到盐卤里面,这样重复两到三次。萝卜干做好以后,装入瓶中摆在冰箱冷藏保存吃半年不会坏。要吃的时候可以根据个人口味,加入各种调料。装萝卜干的瓶子一定要保证无水无油
